- 1 1/2 cups plain whole milk Greek yogurt or 2%, if desired
- 1/4 teaspoon baking powder (this is what makes it "fluffy" – don't skip it!
- 2 tablespoons banana pudding mix
- 1 tablespoon powdered sugar or sweetener or choice, optional
- 1/4 cup peanut butter or 1/8 cup peanut butter powder
- 1 large banana sliced
- 2 sheets graham crackers optional, for garnish (about 8 small crackers)
Instructions
- Add yogurt, baking powder, powdered sugar (if using), and pudding mix to a bowl and stir until fully combined.
- Warm the peanut butter in the microwave for 20 to 30 seconds to make it more pourable.
- Layer two serving bowls with a couple of spoonfuls of the yogurt mixture, a layer of banana slices, a drizzle of peanut butter, and a crushed graham cracker, if desired. Repeat the layers until all of the yogurt mixture has been used.
- Top with a graham cracker, slice of banana and final drizzle of peanut butter. Serve immediately or chill in the fridge for up to one day.

Yogurt options- Whole milk, low-fat, or fat-free Greek yogurt all work in this recipe. Flavored Greek yogurts, like vanilla or banana can also be used to add extra sweetness without additional sweetener.
Puddings- Banana, vanilla, or cheesecake flavored pudding mixes all work well in this. Substitute sugar free varieties as well, if desired.
Sweeteners- Any powdered artificial sweetener can be substituted. Note that if you use honey, agave or other liquid sweetener, your mixture won’t be as thick and fluffy.
Other variations:
You can make this without any sweetener for breakfast and add some granola. Then make a version with sweetener and graham crackers or Nilla wafers as a dessert bowl and add in a few chocolate chips.
You can also stir in a scoop of vanilla or unflavored protein powder to boost the protein even more. Just keep in mind it will thicken the yogurt mixture, so you may want to add a splash of milk or water to keep it fluffy and creamy.
