- Brioche loaf – a highly enriched French loaf filled with plenty of butter and eggs, giving it a more luxurious, pastry-type feel in the mouth. Look for thick cut slices for best results. I picked mine up at Trader Joe’s but you can find it almost anywhere these days.
- Cold milk – Whole milk works best for richness.
- Eggs – These create the base of the custard mixture.
- Vanilla extract – For warmth and depth of flavor.
- Ground cinnamon – Adds just enough spice.
- Butter – You’ll need lots of it for frying each bread slice.
- Powdered sugar (optional) – A light dusting is all you need.
- Maple syrup (optional) – Because sweet real syrup makes everything better.

You can customize this recipe with simple swaps:
- Use challah bread or french bread if brioche isn’t available.
- Swap whole milk for half & half or heavy cream for a richer custard.

Just like my How to Make French Toast tutorial, this brioche french toast recipe has the same steps. Using thick slices of buttery brioche bread, a simple egg custard, and a hot frying pan, you can whip up this luxurious French toast without any fuss in less than 30 minutes. The enriched bread soaks up the custard perfectly, giving you a crisp outside and a soft, pillowy center.
1. Make the Custard
Whisk eggs, milk, vanilla extract, and cinnamon together in a large, shallow dish.
2. Preheat Pan
Preheat a large nonstick skillet over medium-high heat. Add 1 tablespoon of butter to melt.
3. Soak Brioche Bread in Custard + Cook
Soak the brioche bread in the custard for about 3 seconds per side.
Transfer 3-4 pieces (depending on the size of your pan) of the soaked bread to the hot, buttered skillet to fry until golden brown in color on each side; 30 seconds to 1 minute per side.
Add more butter as needed and repeat the process until all pieces are cooked.
4. Serve Warm With Your Favorite Toppings
Serve warm with maple syrup, powdered sugar, strawberries, whipped cream, or anything your little heart desires.

Best Way to Keep French Toast Warm
Line a baking sheet with parchment paper or foil and transfer the fried french toast pieces to the pan and then directly into a 200° F oven. This will keep your french toast warm while you’re frying up the remaining batches. This allows you to serve everything together, all nice and toasty.
French Toast should stay warm for up to 45 minutes before it starts to get a little dried out. If it does appear to get a little dry around the edges, simply brush with a little melted butter. Butter makes everything better!

Yes! One way to freeze French toast is to allow to cook completely. Place back into the bread bag it came in and back into the freezer. You think they might stick, but they totally don’t! Use within 1-2 months for best tasting quality. To reheat, simply pop into a toaster.
Can I make it ahead?
Absolutely. Cook all the slices and store them in the fridge. Reheat in a skillet or on a wire rack in the oven at 325° F until warmed through. Or, if you only need a couple pieces at a time, pop in the toaster to reheat.
