Spiced Chicken Salad with Avocado Mash, Corn, and Fresh Veggies 🥒

Ingredients:
2 chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
½ tsp ground cumin
½ tsp garlic granules
Salt & pepper
Salad Bowl:
1 avocado
Juice from ½ lime
Chili flakes + salt
1 cup cherry tomatoes
½ cucumber, sliced
½ cup sweet corn
3 cups lettuce or mixed greens
Method:
Cook the chicken: Season with spices and cook in a grill pan for 6–7 mins on each side. Slice after resting.
Mash the avocado: Mix with lime, salt, and chili flakes.
Prep the salad: Wash and chop all veggies.
Assemble: Layer greens, add all toppings in sections, then dollop guac in the center.
Garnish: Add extra chili if you like it spicy!
