Ingredients:
1 ½ lbs (680 g) chicken breasts or thighs, cut into bite-sized pieces
1 cup fresh pineapple chunks
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon honey or brown sugar
2 cloves garlic, minced
½ teaspoon smoked paprika
Salt and black pepper, to taste
Skewers (soaked in water if wooden)
Optional Garnish:
Chopped fresh cilantro
Lime wedges
Instructions:
1. Marinate the Chicken:
In a bowl, combine olive oil, soy sauce, honey, garlic, smoked paprika, salt, and pepper.
Add chicken pieces and toss to coat evenly.
Marinate for 30 minutes to 2 hours in the refrigerator.
2. Assemble the Kebabs:
Thread chicken pieces and pineapple chunks alternately onto skewers.
3. Grill the Kebabs:
Preheat the grill to medium-high heat.
Grill skewers for 4–5 minutes per side, or until chicken is cooked through and slightly charred.
4. Serve:
Garnish with chopped cilantro and serve with lime wedges.
Pairs beautifully with coconut rice, salad, or grilled vegetables.
