𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
For the Chicken:
2 small boneless, skinless chicken breasts
1 tsp olive oil
½ tsp garlic powder
½ tsp Italian herbs or parsley
Salt & pepper to taste
Optional: a splash of lemon juice or balsamic vinegar
Tomato-Celery Medley:
1 cup chopped celery
1 cup canned or fresh diced tomatoes
½ tsp onion powder or ¼ small onion, chopped
Salt, pepper, and chili flakes to taste
½ tsp olive oil
Raw Veggies & Extras:
1 yellow bell pepper, sliced
1 carrot, peeled and sliced into sticks
¼ avocado, sliced
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Cook the Chicken
Season chicken breasts with garlic powder, herbs, salt, and pepper. Heat olive oil in a skillet over medium-high. Sear chicken for 4–5 minutes per side until golden and fully cooked. Let rest before slicing.
2️⃣ Make the Tomato-Celery Medley
In a small pan, sauté celery with a bit of olive oil for 3–4 minutes. Add tomatoes, onion powder, salt, and chili flakes. Simmer uncovered for 5–7 minutes until slightly thickened and flavorful.
3️⃣ Prep the Plate
Arrange sliced raw carrots and bell pepper on the side. Slice avocado just before serving for freshness.
4️⃣ Assemble & Serve
Place tomato-celery mixture on a plate, top with sliced chicken. Serve with raw veggies and avocado on the side.
